Our experience centers around traditional firewood cooking, just like our grandparents used to do. You’ll learn how to manage the fire, choose fresh organic ingredients straight from the mountain, and cook with the same care and passion passed down through generations.

We begin by preparing one of the most essential elements of Mexican cuisine: la salsa. Salsa is not just a condiment — it’s a centerpiece of every Mexican table. You’ll learn to make a vibrant salsa verde, which later becomes the star of our main dish: verdolagas in green sauce, a traditional favorite.
Together, we’ll also prepare other classics like salsa roja, salsa macha, tacos, tlacoyos, and tostadas — all by hand and with the guidance of our grandmother, who shares her love and wisdom through every step.
As we cook, your host Luis will share the stories, tips, and techniques he’s learned from his mother and grandmother, making this not just a cooking class, but a celebration of the rich, pre-Hispanic heritage of Mexican food.

You’re not just joining a cooking class — you’re stepping into a living tradition in the heart of the Mexican mountains.
This experience is hosted by Luis and his family, who will welcome you into their home, surrounded by nature and local history. Their family has lived in this village for generations and knows every story, every plant, and every flavor that makes this land unique.
You’ll cook using traditional methods passed down through time — from grinding corn by hand to cooking over firewood, just like our grandparents did. These are techniques only locals know, and you’ll learn them directly from the source.
There’s no electricity in the village, so everything is done the traditional way — slow, conscious, and with care. That’s what makes this experience so special.
